Celery (Apiumombolens) Family: Apiaceae (or Umbelliferae) Harvest: Summer - Autumn Celery is native to the Mediterranean region, and is a plant whose ribs, leaves (celery branch), root and seeds (celery root) are eaten. It comes from the selection of a plant called ache des marais, which played a gastronomic (to absorb soups and fish) and therapeutic (to revive a weak person) role in the ancients. Its seeds have a fennel-like flavour, and are sometimes finely ground and called celery.
